Cream Cheese & Bacon Stuffed Doritos Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 (8 oz) package cream cheese, softened
1 cup cooked and crumbled bacon
1 ½ cups shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
2 eggs, beaten
2 cups crushed Nacho Cheese Doritos
1 tablespoon olive oil (for greasing or spraying baking pan)
Directions:
Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil or non-stick spray.
Butterfly each chicken breast by slicing it horizontally without cutting all the way through, then open like a book.
In a bowl, mix cream cheese, crumbled bacon, shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper until well combined.
Spoon the cream cheese mixture into the center of each chicken breast and fold it back over to seal. Use toothpicks if needed to keep it closed.
Dip each stuffed chicken breast in beaten eggs, then coat thoroughly in crushed Doritos.
Place coated chicken into the prepared baking dish.
Bake for 30-35 minutes, or until chicken is fully cooked and the crust is golden and crisp.
Let rest for 5 minutes before serving. Remove toothpicks and enjoy!
