Mexican Tater Tot Casserole
Ingredients:
1 pound ground beef
1 small onion, diced
1 packet taco seasoning
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) corn, drained
1 can (10 ounces) diced tomatoes with green chilies
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
32 ounces frozen tater tots
1/2 cup sour cream
1/4 cup chopped fresh cilantro (optional)
Salt and pepper to taste
1. Preheat your oven to 400°F (200°C).
2. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.
3. Stir in the taco seasoning, black beans, corn, and diced tomatoes. Cook for an additional 3-4 minutes until heated through. Season with salt and pepper to taste.
4. In a greased 9x13 inch baking dish, spread the beef mixture evenly across the bottom.
5. Layer the tater tots on top of the beef mixture in a single layer.
6. Bake in the preheated oven for 25 minutes.
7. Remove the casserole from the oven and sprinkle the cheddar and Monterey Jack cheeses on top. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
8. Allow the casserole to cool for a few minutes before serving. Top with sour cream and chopped cilantro if desired.
