Easy No-Bake Lemon Pie
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 6 tablespoons unsalted butter, melted
- 1 (14 oz) can sweetened condensed milk
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
Directions:
1. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until well combined.
2. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to form the crust.
3. In a separate bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and vanilla extract until smooth and creamy.
4. In another bowl, whip the heavy whipping cream until stiff peaks form.
5. Gently fold the whipped cream into the lemon mixture until fully incorporated.
6. Pour the filling into the prepared crust and smooth the top with a spatula.
7. Refrigerate for at least 4 hours or until the pie is set.
8. Garnish with extra lemon zest or whipped cream before serving if desired.
