2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp paprika (optional)
Garlic-Herb Crust:
1/3 cup breadcrumbs (panko or regular)
3 cloves garlic, minced
2 tbsp chopped fresh rosemary (or thyme/parsley)
1 tbsp Dijon mustard
2 tbsp grated Parmesan
2 tbsp melted butter
π₯ Instructions:
Preheat Oven: Set to 400Β°F (200Β°C).
Season Pork: Pat pork dry. Rub all over with olive oil, salt, pepper, and paprika.
Prepare Crust: In a small bowl, mix breadcrumbs, garlic, herbs, mustard, Parmesan, and melted butter until combined.
Sear Pork (Optional but adds flavor): In a hot oven-safe skillet, sear the pork on all sides until golden (2β3 minutes per side).
Apply Crust & Roast: Press the crust mixture over the top and sides of the pork. Transfer to the oven and roast for 20β25 minutes, or until the internal temperature reaches 145Β°F (63Β°C).
