Pepperoni Cheese Pizza Quesadillas
Ingredients:
- 8 (8-inch) flour tortillas
- 1/2-1 cup marinara or pizza sauce
- 1 cup grated mozzarella cheese
- 4-6 oz pepperoni slices
- 1 teaspoon olive oil or butter
- 1/4 cup diced onions
- 1/4-1/2 cup diced bell peppers
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon dried basil
- Salt and pepper to taste
Directions:
1. Heat olive oil or butter in a skillet over medium heat. Add diced onions and bell peppers, sauté until softened, about 4-5 minutes. Stir in Italian seasoning, dried basil, salt, and pepper. Remove from heat and set aside.
2. Preheat a clean skillet or griddle over medium heat.
3. Place one tortilla on the skillet. Spread a thin layer of marinara or pizza sauce over the tortilla.
4. Sprinkle a generous layer of grated mozzarella cheese over the sauce.
5. Add sautéed vegetable filling evenly on top of the cheese.
6. Arrange pepperoni slices over the vegetables.
7. Sprinkle another layer of mozzarella cheese on top of the pepperoni to help the quesadilla stick together.
8. Cover with a second tortilla and press gently.
9. Cook for 2-3 minutes until the bottom tortilla is golden brown and the cheese starts to melt.
10. Carefully flip the quesadilla and cook the other side for an additional 2-3 minutes until golden and cheese is fully melted.
11. Remove from skillet and let cool slightly before cutting into wedges. Serve with extra marinara sauce for dipping.

Tips:
