Ingredients:
1 cup plain yogurt
1 cup granulated sugar
3 large eggs
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Zest of 1 lemon (optional)

Directions:
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

In a mixing bowl, combine the yogurt, sugar, and eggs. Whisk together until the mixture is smooth and well blended. Slowly add the vegetable oil and vanilla extract, mixing until fully incorporated.
