Ingredients
For the Chicken:
🍗 2 large chicken breasts
🍋 Juice and zest of 1 lemon

For the Salad Base:
🥬 4 cups mixed greens (romaine, spinach, or arugula)
🍅 1 cup cherry tomatoes, halved
🥒 1/2 cup cucumber, sliced
🥑 1 avocado, sliced
🥕 1/4 cup shredded carrots
🌽 1/4 cup corn kernels (grilled or fresh, optional)
For the Lemon-Herb Dressing:
🍋 2 tbsp olive oil
🍋 Juice of 1 lemon
🧄 1 clove garlic, minced
🍯 1 tsp honey or Dijon mustard
🧂 Salt & pepper to taste
🌿 1 tbsp chopped fresh parsley
Instructions
1️⃣ Marinate and Grill the Chicken:
In a bowl, whisk together lemon juice, lemon zest, olive oil, garlic, oregano, salt, and pepper. Add the chicken breasts, coating them well, and let marinate for at least 20 minutes.
