🍋 No-Bake Lemon Tart
Lemon lovers, this one’s for you!
Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs (or crushed digestive biscuits)
1/3 cup unsalted butter, melted
2 tablespoons granulated sugar
For the Lemon Filling:
1 cup sweetened condensed milk
1/2 cup fresh lemon juice (about 2 lemons)
1 tablespoon lemon zest
1/2 cup heavy cream, whipped
1 teaspoon vanilla extract
For Garnish (Optional):
Whipped cream
Lemon slices
Fresh mint leaves
Instructions:
Step 1: Prepare the Crust
In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
Press the mixture evenly into a 9-inch tart pan (or pie dish).
Place in the fridge for 15 minutes to firm up.
Step 2: Make the Lemon Filling
In a bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and vanilla extract.
Gently fold in whipped heavy cream until smooth.
Step 3: Assemble & Chill
Pour the lemon filling into the prepared crust and smooth the top.
Refrigerate for at least 4 hours, or until fully set.
Step 4: Serve & Enjoy
Garnish with whipped cream, lemon slices, or mint leaves before serving.
