Mediterranean-Inspired Creamy Dill Cod with Cucumber Spinach Orzo
Ingredients:
For the Cod:

4 cod fillets (about 6 oz each)
2 tablespoons olive oil
2 tablespoons butter
3 cloves garlic, minced
¼ cup fresh dill, chopped, plus extra for garnish
1 lemon, half juiced and half sliced
½ cup heavy cream
Salt and pepper to taste

For the Cucumber Spinach Orzo:

2 cups orzo pasta
1 large cucumber, diced
3 cups fresh spinach, roughly chopped
½ cup cherry tomatoes, halved
⅓ cup red onion, finely diced
¼ cup fresh dill, chopped
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon lemon zest
½ cup crumbled feta cheese (optional)
Salt and pepper to taste

Directions:

Bring a large pot of salted water to a boil. Cook orzo according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
While the orzo is cooking, pat cod fillets dry with paper towels and season both sides with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Place the cod fillets in the skillet and cook for 3-4 minutes on each side until golden and flaky. Remove from the skillet and set aside.
In the same skillet, reduce heat to medium-low and add butter. Once melted, add minced garlic and sauté for 30 seconds until fragrant.
Pour in the heavy cream, lemon juice, and half of the fresh dill. Stir to combine and let it simmer for 2-3 minutes until slightly thickened.
Return the cod fillets to the skillet, spooning the sauce over them. Place lemon slices around the fillets. Cover and simmer for an additional 2 minutes to warm through.
For the orzo, in a large bowl, combine the cooled pasta with diced cucumber, chopped spinach, cherry tomatoes, red onion, and dill.
Drizzle with olive oil and lemon juice, sprinkle with lemon zest, and season with salt and pepper. Toss gently to combine.
If using, fold in the crumbled feta cheese just before serving.
To serve, place a portion of the cucumber spinach orzo on each plate and top with a cod fillet. Spoon the creamy dill sauce over the fish and garnish with additional fresh dill.
