📋 Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 scotch bonnet pepper, finely chopped
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon allspice
- 1 teaspoon thyme
- Pineapple chunks
- Salt and pepper to taste
- Skewers
📝 Instructions
1. In a bowl, combine garlic, ginger, chopped scotch bonnet pepper, soy sauce, olive oil, allspice, thyme, salt, and pepper.
2. Add the shrimp to the marinade, tossing to coat. Let it marinate for at least 30 minutes.
3. Preheat the grill to medium-high heat.
4. Thread the marinated shrimp and pineapple chunks onto the skewers.
5. Grill the skewers for 2-3 minutes on each side or until the shrimp are cooked through and the pineapple is caramelized.
