Creamy Spinach & Mushroom Lasagna ππ§β¨
A decadent and cheesy twist on classic comfort food, perfect for a cozy meal!
Ingredients:
12 lasagna noodles (cooked and drained)
3 cups fresh spinach, chopped
2 cups mushrooms, sliced
3 cups ricotta cheese
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
3 cups Alfredo sauce
1 small onion, finely chopped
3 cloves garlic, minced
2 tbsp olive oil
1 tsp dried thyme
Salt and pepper to taste
Instructions:
SautΓ© the Veggies:
Heat olive oil in a large skillet over medium heat.
Add onions, garlic, and mushrooms. SautΓ© until tender and fragrant.
Stir in spinach and cook until wilted. Season with thyme, salt, and pepper.
Prepare the Filling:
In a bowl, mix ricotta cheese, 1 cup mozzarella, 1/2 cup Parmesan, and a pinch of salt.
Assemble the Lasagna:
Preheat the oven to 375Β°F (190Β°C) and grease a baking dish.
Spread a thin layer of Alfredo sauce on the bottom.
Layer lasagna noodles, ricotta mixture, sautΓ©ed veggies, Alfredo sauce, and repeat.
Finish with a layer of noodles, Alfredo sauce, and remaining mozzarella and
Parmesan.
Bake:
Cover with foil and bake for 30 minutes.
Remove foil and bake for another 10-15 minutes, until golden and bubbly.
Garnish & Serve:
Let the lasagna rest for 10 minutes before slicing.
Garnish with fresh thyme or parsley for a fragrant touch.
