Ingredients:
• 1 cup cooked chickpeas (200 g), mashed
• 1/2 cup rolled oats (45 g)
• 1 small onion, finely chopped (70 g)
• 2 cloves garlic, minced
• 1/4 cup grated carrot (50 g)
• 2 tbsp maple syrup (30 ml)
• 1 tsp smoked paprika (2.3 g)
• 1/2 tsp salt
• 1/2 tsp ground black pepper
• 1 tbsp chickpea flour (15 g)
• 1 tbsp olive oil (15 ml)
Directions:
1. In a bowl, combine the mashed chickpeas, rolled oats, chopped onion, garlic, grated carrot, and maple syrup.
2. Stir in smoked paprika, salt, pepper, and chickpea flour until the mixture holds together.
3. Form the mixture into small, round sausage patties.
4. Heat olive oil in a skillet over medium heat and cook the patties for 4–5 minutes per side until golden and heated through.
5. Serve warm alongside toast or a vegan scramble.
