Easter Popcorn Balls
Ingredients:
8 cups popped popcorn (plain, unsalted)
3 cups mini marshmallows
1/4 cup unsalted butter
1/2 teaspoon vanilla extract
Gel food coloring (pastel colors like pink, yellow, blue, and purple)
1/4 cup rainbow sprinkles (optional)
Nonstick cooking spray (for hands)
Directions:
Prep the Popcorn:
Spread the popped popcorn on a large baking sheet, removing any unpopped kernels.
Make the Marshmallow Mixture:
In a large saucepan, melt the butter over medium heat.
Add mini marshmallows and stir continuously until melted and smooth.
Stir in vanilla extract.
Divide and Color:
Divide the marshmallow mixture into separate bowls based on the number of colors you want.
Add a few drops of gel food coloring to each bowl and mix well until the colors are vibrant and even.
Combine with Popcorn:
Divide the popcorn into the same number of batches as the marshmallow mixtures.
Pour each colored mixture over a batch of popcorn and gently stir until the popcorn is well-coated.
Form the Popcorn Balls:
Lightly grease your hands with nonstick cooking spray.
Take small handfuls of the colored popcorn mixture and shape them into balls, about the size of a tennis ball.
If desired, sprinkle with rainbow sprinkles while still sticky.
Set and Serve:
Place the formed popcorn balls on parchment paper and let them set at room temperature for about 30 minutes.
Serve and enjoy!
