Ice cream sandwich bars
Ingredients:
For the Sandwich Layers:

12-16 chocolate wafer cookies (depending on size)

1/2 cup melted chocolate (for coating)

For the Ice Cream Layers:

1 pint vanilla ice cream, softened

1 pint strawberry ice cream, softened

1 pint chocolate ice cream, softened

Instructions:
1. Prepare the Layers:
Line a baking dish (9x9-inch or similar) with parchment paper.

Arrange a layer of chocolate wafer cookies at the bottom of the dish.

2. Add Ice Cream:
Vanilla Layer: Spread a layer of softened vanilla ice cream over the cookies. Smooth it out to cover evenly.

Chocolate Layer: Spread a layer of softened chocolate ice cream over the vanilla layer, again smoothing it out evenly.

Strawberry Layer: Finally, spread a layer of softened strawberry ice cream over the chocolate layer, smoothing it out to the edges.

3. Add the Cookie Top Layer:
Place another layer of chocolate wafer cookies on top, pressing them gently into the ice cream to create the sandwich effect.

4. Freeze:
Cover the dish with plastic wrap and place it in the freezer for at least 4 hours, or until the ice cream is firm and the layers are set.

5. Slice and Coat:
Once frozen, remove the ice cream sandwich bars from the freezer.

If desired, drizzle melted chocolate over the top or dip the sides of the bars into the melted chocolate for an extra crunchy and sweet layer. Allow the chocolate to harden before serving.

6. Serve:
Slice into bars and enjoy!

Tips:
You can customize this recipe by adding different ice cream flavors or using other types of cookies for the sandwich layers (like graham crackers or shortbread).

If you want a more indulgent treat, you can sprinkle chopped nuts, crushed cookies, or sprinkles on the chocolate before it hardens.

Enjoy these creamy, crunchy, and irresistible ice cream sandwich bars!
