Chicken Salad
Chicken Breast
1/4 Cup Mayo
1 tsp Lemon Juice
1/2 tsp Dijon Mustard
1 Celery Rib (minced)
1 small Shallot (onion) (minced)
1 tbsp parsley (minced)
Salt & Pepper (I use fine pink salt)
Boil chicken or however you prepare it. You can cut it in chunks or shred. I shredded mine it's stays on the bread better. Place in fridge to let cool.
After chicken has cooled mix all ingredients together add chicken mix again. 1 chicken breast shredded is all I need to use up all the mixture.
