Ingredients:
For the Roll-Ups:
8 slices of white bread (or brioche for extra richness)
2 large eggs
Β½ cup milk
1 teaspoon vanilla extract
ΒΌ teaspoon ground cinnamon
3 tablespoons unsalted butter, melted
ΒΌ cup granulated sugar mixed with 1 teaspoon ground cinnamon (for coating)
For the Glaze:
Β½ cup powdered sugar
2β3 teaspoons milk (adjust for desired consistency)
Β½ teaspoon vanilla extract
Instructions:
Prepare the Bread: Using a rolling pin, gently flatten each slice of bread to make it easier to roll. Be careful not to tear the bread.
Make the Coating Mixture: In a small bowl, mix the melted butter with 1 teaspoon of vanilla extract. In another shallow dish, combine the granulated sugar and ground cinnamon.
Assemble the Roll-Ups: Brush each flattened slice of bread with the butter mixture, then sprinkle a light layer of the cinnamon-sugar mixture over the surface. Starting at one end, tightly roll up each slice into a spiral. Secure with a toothpick if needed to keep them from unrolling.
Prepare the Custard: In a separate bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until smooth.
Cook the Roll-Ups: Heat a nonstick skillet over medium heat. Dip each roll-up into the egg mixture, ensuring itβs fully coated but not soggy. Place in the skillet and cook for 2β3 minutes per side, or until golden brown and slightly crispy. Repeat with the remaining roll-ups.
Make the Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk, a few drops at a time, if the glaze is too thick.
Finish and Serve: Drizzle the glaze generously over the cooked roll-ups. Serve warm with a side of fresh fruit or maple syrup for an extra treat.
