Delicious One-Pan Roasted Chickpea and Vegetable Bake Recipe 🍽️🌿
Ingredients:
2 cans (15 oz / 425g each) Chickpeas, rinsed and drained
1 head Broccoli, cut into florets
2 Carrots, sliced or diced
1 Red Bell Pepper, chopped
1 Zucchini, chopped
1 Red Onion, cut into wedges
3 tablespoons Olive Oil
1 teaspoon Dried Oregano
1 teaspoon Dried Basil
1/2 teaspoon Garlic Powder
1/2 teaspoon Paprika
Salt and Pepper to taste
2-3 tablespoons Nutritional Yeast (for cheesy flavor, optional)
Fresh Parsley, chopped (for garnish)
Directions:
1. Preheat Oven: Preheat oven to 400°F (200°C).
2. Combine: In a large bowl, combine the drained chickpeas, broccoli florets, carrots, bell pepper, zucchini, and red onion.
3. Season: Drizzle with olive oil. Sprinkle oregano, basil, garlic powder, paprika, salt, and pepper over the vegetables and chickpeas. Toss everything together until well coated.
4. Bake: Spread the mixture evenly in a single layer on a large baking sheet or in a large casserole dish.
5. Roast: Bake for 25-35 minutes, tossing halfway through, until the vegetables are tender and slightly caramelized, and the chickpeas are slightly firm.
6. Add "Cheese" (Optional): If using nutritional yeast, sprinkle it over the bake during the last 5 minutes of cooking.
7. Garnish & Serve: Remove from oven, garnish with fresh parsley, and serve warm as a main dish or side.
