STRAWBERRY CHEESECAKE COOKIES
INGREDIENTS
For the Cookies
½ cup unsalted butter, softened
¾ cup light brown sugar
¼ cup granulated sugar
1 large egg
1 tsp vanilla extract
1¾ cups all-purpose flour
½ tsp baking soda
¼ tsp salt
¾ cup chopped fresh strawberries (pat dry with paper towel)
For the Cheesecake Filling
4 oz cream cheese, softened
2 tbsp powdered sugar
¼ tsp vanilla extract

INSTRUCTIONS
1. Prepare the Filling
In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
Scoop into 1 tsp-sized dollops onto parchment paper and freeze for at least 30 minutes.
2. Make the Dough
Cream butter and both sugars until light and fluffy.
Add egg and vanilla; mix well.
Combine flour, baking soda, and salt. Add to wet ingredients and stir until just combined.
Gently fold in chopped strawberries.
3. Assemble the Cookies
Scoop 2 tbsp of cookie dough, flatten slightly, and place a frozen cream cheese ball in the center.
Cover with another tbsp of dough, seal edges, and form into a ball.
Place on lined baking tray.
4. Bake
Bake at 350°F (175°C) for 13–15 minutes until lightly golden.
Cool on the tray for 10 minutes before transferring to a rack.
