Crispy Cheddar Chicken Tenders with Ranch Dip

Ingredients:

4 boneless, skinless chicken breasts, cut into strips
1 cup all-purpose flour
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt and pepper to taste
2 large eggs, beaten
2 cups panko breadcrumbs
1 1/2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/4 cup parsley, chopped (for garnish)
Olive oil, for frying
For the Ranch Dip:
1/2 cup sour cream
1/4 cup mayonnaise
1 tablespoon ranch seasoning mix
1 tablespoon lemon juice

Directions:

1. Prepare the Chicken: Cut the chicken breasts into tenders. Season the flour with garlic powder, onion powder, smoked paprika, salt, and pepper. Set up a breading station with three shallow dishes: one with seasoned flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, shredded cheddar cheese, and Parmesan cheese.
2. Bread the Chicken: Dredge each chicken tender first in the flour mixture, then dip it into the beaten eggs, and finally coat it with the breadcrumb and cheese mixture. Press gently to make sure the coating sticks.
3. Cook the Chicken: Heat a large skillet over medium heat and add olive oil. Once the oil is hot, fry the chicken tenders in batches for 3-4 minutes per side, or until golden brown and crispy, and the internal temperature reaches 165°F. Remove the chicken from the skillet and place it on a paper towel-lined plate to drain.
4. Make the Ranch Dip: In a small bowl, mix together sour cream, mayonnaise, ranch seasoning, and lemon juice. Stir until smooth and well combined.
5. Serve: Serve the crispy cheddar chicken tenders with a side of creamy ranch dip, garnished with fresh parsley.
