Miso Shrimp Scampi 🍤

Ingredients:

• 1 lb (450g) shrimp, peeled and deveined
• 3 tbsp unsalted butter
• 2 garlic cloves, minced
• 2 tbsp white miso paste
• 1/4 cup dry white wine (substitute with chicken broth)
• 1 tbsp soy sauce (low-sodium)
• 1/2 tsp red pepper flakes (optional)
• 1/4 cup fresh lemon juice
• 1/4 cup fresh parsley, chopped
Salt and pepper to taste
• Cooked pasta or crusty bread for serving
Instructions:
1. Melt butter in a large skillet over medium heat. Add garlic and sauté until fragrant.
2. Add shrimp and cook until pink and opaque. Remove and set aside.
3. Whisk miso paste, soy sauce, and wine/chicken broth into the skillet. Simmer for 2-3 minutes.
4. Return shrimp to the skillet, tossing to coat in the sauce.
5. Stir in lemon juice and parsley. Season with salt, pepper, and red pepper flakes.
6. Serve over pasta or with crusty bread.
Notes:
• Adjust the amount of miso paste for a milder or stronger flavor.
• Serve with a side of sautéed greens.
