For the meatballs:
1 lb ground beef or lamb
2 garlic cloves, minced ๐ง
1/4 cup breadcrumbs
1 egg ๐ฅ
1 tsp dried oregano
Salt & pepper to taste
1 tbsp olive oil (for frying)
For the orzo:
1 cup orzo pasta
1 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 cup cherry tomatoes ๐
2 cups vegetable or chicken broth
1/2 cup spinach or kale, chopped
1/4 cup crumbled feta cheese ๐ง
Fresh basil to garnish ๐ฟ
๐ฉโ๐ณ Instructions:
Mix all meatball ingredients in a bowl and roll into small balls. Brown them in a skillet with olive oil until cooked through. Set aside. In the same skillet, sautรฉ onion and garlic in olive oil until soft, then add cherry tomatoes and cook until blistered. Stir in orzo, broth, and greens. Let simmer for about 10โ12 minutes until orzo is tender. Add meatballs back to the pan to warm through. Serve topped with crumbled feta and fresh basil.
