🌸💟Strawberry Shortcake Cheesecake🍰😋
Ingredients:
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
2 tablespoons granulated sugar
16 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
2 cups whipped cream
2 cups fresh strawberries, sliced
1/4 cup strawberry jam
1/4 cup water
Fresh mint leaves, for garnish
Directions:
In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator while preparing the filling.
In a separate bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, and beat until well combined.
Fold in the whipped cream gently until fully incorporated.
Spread half of the cream cheese mixture over the chilled crust.
In a small saucepan, heat strawberry jam and water over low heat until melted and smooth. Remove from heat and let it cool slightly.
Arrange half of the sliced strawberries over the cream cheese layer in the pan. Drizzle half of the strawberry jam mixture over the strawberries.
Repeat the layers with the remaining cream cheese mixture, sliced strawberries, and strawberry jam mixture.
Cover and refrigerate the cheesecake for at least 4 hours, or until set.
Before serving, garnish with fresh mint leaves if desired. Slice and enjoy!
