Chicken Lo Mein
Ingredients:
8 ounces lo mein noodles or spaghetti
2 boneless, skinless chicken breasts, thinly sliced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
1 tablespoon sesame oil
1 tablespoon vegetable oil
2 cloves garlic, minced
1 teaspoon minced fresh ginger
1 red bell pepper, thinly sliced
1 carrot, julienned
1 cup snow peas
2 green onions, thinly sliced
Sesame seeds, for garnish (optional)
Chopped fresh cilantro or parsley, for garnish (optional)
Instructions:
Cook the lo mein noodles according to the package instructions. Drain and set aside.
In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, and sesame oil. Set aside.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken breasts and cook until they're browned and cooked through, about 4-5 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add a little more oil if needed. Add the minced garlic and ginger, and cook for about 30 seconds, or until fragrant.
Add the sliced bell pepper, julienned carrot, and snow peas to the skillet. Cook, stirring frequently, until the vegetables are crisp-tender, about 3-4 minutes.
Return the cooked chicken to the skillet. Add the cooked lo mein noodles and the sauce mixture to the skillet. Toss everything together until well combined and heated through, about 2-3 minutes.
Remove the skillet from the heat and sprinkle the sliced green onions, sesame seeds, and chopped fresh cilantro or parsley over the top, if desired.
Serve the Chicken Lo Mein immediately, and enjoy your delicious homemade Asian-inspired dish!
