Garlic Herb Chicken Paired with Lemon Orzo
Ingredients:
For the Garlic Herb Chicken:
2 large boneless, skinless chicken breasts
2 tbsp olive oil
3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
½ tsp smoked paprika
½ tsp salt
½ tsp black pepper
1 tbsp fresh lemon juice
For the Lemon Orzo:
1 cup orzo pasta
2 cups chicken broth
1 tbsp butter
1 clove garlic, minced
Zest of 1 lemon
1 tbsp fresh lemon juice
¼ cup grated Parmesan cheese
2 tbsp fresh parsley, chopped
Directions:
Prepare the Chicken: In a bowl, mix olive oil, minced garlic, oregano, thyme, smoked paprika, salt, pepper, and lemon juice. Coat the chicken breasts in the marinade and let sit for 15 minutes.
Cook the Chicken: Heat a large skillet over medium-high heat. Cook the chicken for 5-6 minutes per side until golden brown and cooked through. Remove from heat and let rest for 5 minutes before slicing.
Make the Lemon Orzo: In a saucepan, melt butter over medium heat. Sauté minced garlic for 30 seconds, then add orzo and toast for 1-2 minutes. Pour in chicken broth and bring to a simmer. Cook for 10-12 minutes, stirring occasionally, until orzo is tender and liquid is absorbed.
Finish the Orzo: Stir in lemon zest, lemon juice, Parmesan cheese, and fresh parsley. Mix well and remove from heat.
Serve: Plate the lemon orzo and top with sliced garlic herb chicken. Garnish with extra parsley and Parmesan if desired.
