Spinach and Cheese Puff Pastry Rolls
Ingredients:
- 1 cup fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 package of puff pastry, thawed
- 1 egg (for egg wash)
- Salt and pepper to taste
Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a large bowl, mix the chopped spinach, ricotta cheese, mozzarella cheese, garlic powder, onion powder, salt, and pepper until well combined.
3. Roll out the thawed puff pastry on a lightly floured surface and cut it into squares (about 4 inches).
4. Place a spoonful of the spinach and cheese mixture in the center of each square.
5. Fold the corners of the pastry squares over the filling to create a pocket and pinch the edges to seal.
6. Beat the egg in a small bowl and brush it over the tops of the filled pastry pockets.
7. Arrange the pastry rolls on a baking sheet lined with parchment paper.
8. Bake in the preheated oven for 15-20 minutes or until golden brown.
Notes:
- Feel free to add other herbs like basil or parsley for extra flavor!
- Serve with a side of marinara sauce for dipping.
