Spicy Cajun Chicken with Creamy Parmesan Linguine Pasta
Ingredients:
For the Chicken:
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
2 tbsp olive oil
1 tbsp Cajun seasoning
1 tsp garlic powder
1/2 tsp smoked paprika
1/4 tsp cayenne pepper (adjust to taste)
Salt and black pepper to taste
1 tbsp butter
For the Pasta:
1 lb linguine pasta
4 tbsp butter
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese, plus more for garnish
1/4 cup chicken broth
1/4 cup chopped fresh parsley
Salt and black pepper to taste
Directions:
1. Prepare the Chicken: In a bowl, toss the chicken pieces with olive oil, Cajun seasoning, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper. Make sure the chicken is evenly coated.
2. Cook the Chicken: Heat 1 tbsp of butter in a large skillet over medium-high heat. Add the chicken and cook for about 6-8 minutes, or until fully cooked and lightly browned. Set aside.
3. Cook the Pasta: While the chicken is cooking, bring a large pot of salted water to a boil. Add the linguine pasta and cook according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
4. Make the Creamy Parmesan Sauce: In the same skillet, melt butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Pour in the heavy cream and chicken broth, and bring to a simmer.
5. Add Parmesan: Reduce heat to low and stir in the grated Parmesan cheese until the sauce is smooth and creamy. Season with salt and black pepper to taste.
6. Combine: Add the cooked pasta to the skillet with the creamy Parmesan sauce. Toss to coat. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
7. Serve: Stir in the cooked Cajun chicken and chopped fresh parsley. Serve immediately, garnished with extra Parmesan cheese.
