🍍 Ingredients:
400g large shrimp, peeled & deveined
1 cup fresh pineapple chunks
1 red bell pepper, cut into squares
Skewers (soaked if wooden)
Fresh coriander or mint, for garnish
For the chili-lime glaze:
Juice of 2 limes
1 tbsp honey or maple syrup 🍯
1 tbsp soy sauce
1 tbsp olive oil
1 tsp chili flakes or fresh minced chili 🌶️
1 garlic clove, minced
Salt & pepper to taste
🔥 Instructions:
Make the glaze by whisking all ingredients in a small bowl.
Thread shrimp, pineapple, and bell pepper onto skewers in alternating patterns.
Brush skewers with half the glaze. Grill over medium-high heat for 2–3 minutes per side until shrimp are opaque and slightly charred.
Brush with remaining glaze before serving and garnish with fresh herbs.
