Garlic Butter Steak Bites with Creamy Ranch Pasta
Ingredients:
For the Steak Bites:
1.5 lbs sirloin steak, cut into 1-inch cubes
4 tbsp butter, divided
6 cloves garlic, minced
1 tbsp olive oil
1 tsp dried thyme
1 tsp smoked paprika
1/2 tsp red pepper flakes (optional, for a little heat!)
Salt and freshly ground black pepper to taste
1 tbsp Worcestershire sauce
2 tbsp chopped fresh parsley, for garnish
For the Creamy Ranch Pasta:
1 lb pasta (penne, rotini, or your favorite shape)
4 tbsp butter
3 cloves garlic, minced
1/4 cup all-purpose flour
3 cups milk
1 cup chicken broth
1 packet (1 oz) ranch dressing mix
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup chopped fresh chives, for garnish
1/4 cup grated Parmesan cheese, for garnish
1/2 cup chopped sun-dried tomatoes (oil-packed, drained)
Directions:
1. Cook the Pasta: Cook pasta according to package directions until al dente. Drain and set aside.
2. Prepare the Steak Bites: In a bowl, toss the steak cubes with olive oil, thyme, smoked paprika, red pepper flakes (if using), salt, and pepper.
3. Sear the Steak: Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add the steak in a single layer (work in batches if necessary to avoid overcrowding). Sear for 2-3 minutes per side, until nicely browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.
4. Make the Garlic Butter Sauce: In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and cook for about 30 seconds, until fragrant. Stir in the Worcestershire sauce and cook for another minute.
5. Combine Steak and Sauce: Return the steak bites to the skillet and toss to coat with the garlic butter sauce. Remove from heat and sprinkle with fresh parsley.
6. Make the Creamy Ranch Sauce: In a large saucepan, melt the butter over medium heat. Add the minced garlic and cook for 30 seconds, until fragrant. Whisk in the flour and cook for 1-2 minutes, until a smooth paste forms (this is called a roux). Gradually whisk in the milk and chicken broth, ensuring there are no lumps. Bring to a simmer, stirring constantly.
7. Add Ranch Flavor: Stir in the ranch dressing mix and cheddar cheese. Cook until the cheese is melted and the sauce is smooth and creamy. Stir in the sour cream.
8. Combine Pasta and Sauce: Add the cooked pasta to the creamy ranch sauce and toss to coat. Stir in the sun-dried tomatoes.
9. Serve: Serve the creamy ranch pasta topped with the garlic butter steak bites. Garnish with fresh chives and grated Parmesan cheese.
