Cajun Chicken Rigatoni
Ingredients 🛒:
12 oz rigatoni pasta
1 lb chicken breast (cut into bite-sized pieces)
1 tbsp Cajun seasoning
1 tbsp olive oil
2 tbsp butter
3 cloves garlic (minced)
1/2 cup sun-dried tomatoes (chopped)
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan
Salt & pepper to taste
Fresh parsley (for garnish)
Directions 👩🍳:
Cook Pasta: Boil rigatoni until al dente. Drain and set aside.
Season Chicken: Toss chicken with Cajun seasoning. In a large skillet, heat olive oil and cook chicken until golden and fully cooked. Set aside.
Make the Sauce: In the same skillet, melt butter and sauté garlic for 1 minute. Add sun-dried tomatoes, cream, and broth. Simmer for 3–5 minutes.
Finish the Dish: Stir in Parmesan cheese. Add cooked pasta and chicken, tossing to coat in the creamy Cajun sauce.
Serve It Up: Garnish with chopped parsley and extra Parmesan if desired.
