Ingredients:
For the Ribeye Steak:
2 ribeye steaks (around 12-16 oz each)
2 tbsp olive oil
Salt and black pepper (to taste)
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp fresh rosemary (optional, for garnish)
2 tbsp butter (for basting)
For the Loaded Mashed Potatoes:
4 large russet potatoes (peeled and diced)
1 cup sour cream
½ cup milk
4 tbsp butter
1 cup shredded cheddar cheese
1/2 cup cooked and crumbled bacon
2 tbsp chopped green onions
Salt and pepper (to taste)
For the Grilled Asparagus:
1 bunch fresh asparagus (trimmed)
1 tbsp olive oil
Salt and black pepper (to taste)
1 tbsp lemon juice (optional, for a fresh finish)
Instructions:Step 1: Prepare the Ribeye Steaks
Season the Steak: Pat the ribeye steaks dry with a paper towel. Rub both sides of the steaks with olive oil, and season generously with salt, pepper, garlic powder, and onion powder.
Cook the Steak: Preheat a cast-iron skillet or grill pan over medium-high heat. Once hot, add the steaks. Cook for 4-5 minutes per side for medium-rare (adjust cooking time for your preferred doneness). In the last minute of cooking, add butter and spoon it over the steaks to baste them.
Rest the Steak: Once cooked, remove the steaks from the pan and let them rest for 5 minutes before slicing. Garnish with fresh rosemary if desired.
Step 2: Make the Loaded Mashed Potatoes
Boil the Potatoes: Place the diced potatoes in a large pot and cover with water. Bring to a boil and cook for 15-20 minutes or until tender. Drain and return the potatoes to the pot.

Prepare the Asparagus: Trim the ends of the asparagus and drizzle with olive oil. Season with salt, pepper, and lemon juice if using.
Grill the Asparagus: Preheat a grill or grill pan over medium heat. Grill the asparagus for 3-5 minutes, turning occasionally until tender and slightly charred.
Serve: Arrange the grilled asparagus alongside the steak and mashed potatoes.
Step 4: Assemble the Dish
Plate the Steak: Slice the ribeye steak into thick strips and arrange it on the plate next to the mashed potatoes and asparagus.
