🇮🇹 Pappardelle al Cinghiale (Wild Boar Ragù)
Thick ribbons of pasta smothered in a rich, slow-cooked wild boar sauce – rustic, hearty, and unforgettable!
Ingredients:
• 300 g pappardelle pasta
• 400 g wild boar meat, diced
• 1 onion, chopped
• 1 carrot, chopped
• 1 celery stalk, chopped
• 2 garlic cloves, minced
• 400 ml red wine
• 400 g canned tomatoes
• 2 tbsp olive oil
• 1 bay leaf
• Salt and pepper
Instructions:
1️⃣ Sear boar meat in olive oil until browned. Remove and set aside.
2️⃣ Sauté onion, carrot, celery, and garlic until softened.
3️⃣ Return meat, pour in wine and simmer 10 mins.
4️⃣ Add tomatoes, bay leaf, salt, and pepper. Simmer 2 hrs.
5️⃣ Cook pasta and toss with ragù. Serve hot with cheese if desired.
