🍓 Strawberry Cheesecake Cookies 🍓
Soft, buttery strawberry cookies filled with a sweet cheesecake center and swirled with homemade strawberry jam — these are the ultimate treat for spring and summer!

🍓 For the Strawberry Jam:

1 cup fresh strawberries, finely diced
2 tbsp light brown sugar
🧁 For the Cheesecake Filling:

4 oz cream cheese, softened
3 tbsp granulated sugar
1/2 tsp vanilla extract
🍪 For the Strawberry Cookies:

1/2 cup unsalted butter, melted
1/2 cup sugar
1 egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup fresh strawberries, finely diced
Strawberry jam (from above)
Granulated sugar, for sprinkling

Instructions:

1. Make the Strawberry Jam:

In a small saucepan, combine strawberries and brown sugar.
Cook over medium heat, stirring occasionally, until strawberries break down and mixture thickens (about 8–10 minutes).
Set aside to cool completely.

2. Make the Cheesecake Filling:

In a small bowl, mix cream cheese, granulated sugar, and vanilla extract until smooth.
Scoop small 1/2 tsp mounds onto a parchment-lined plate.
Freeze for at least 30 minutes or until firm.

3. Make the Cookie Dough:

In a large bowl, whisk together melted butter and sugar.
Add egg and vanilla; whisk until combined.
In another bowl, mix flour, baking powder, baking soda, and salt.
Add dry ingredients to wet ingredients and stir until a dough forms.
Fold in diced strawberries.

4. Assemble the Cookies:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Scoop 1 1/2 tbsp of dough and flatten it slightly in your hand.
Place a frozen cheesecake filling dollop in the center. Top with another small piece of dough and seal edges to form a ball.
Gently press to flatten slightly. Spoon 1/2 tsp of cooled strawberry jam on top and swirl with a toothpick.
Sprinkle tops lightly with granulated sugar.

5. Bake:

Bake for 11–13 minutes, or until edges are lightly golden and centers are just set.
Cool on baking sheet 5 minutes before transferring to a wire rack.
