Crispy Honey-Glazed Bacon Roasted Potatoes with Herbs
Ingredients:
2 lbs baby potatoes, halved
6 slices bacon, chopped
2 tablespoons olive oil
2 tablespoons honey
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 tablespoon fresh rosemary, chopped (or 1 tsp dried)
Salt and black pepper, to taste
Fresh parsley, for garnish
Directions:
Preheat oven to 400°F (200°C).
In a large bowl, toss halved baby potatoes with olive oil, honey, garlic powder, smoked paprika, rosemary, salt, and pepper until evenly coated.
Spread potatoes out on a baking sheet lined with parchment paper or foil.
Sprinkle chopped bacon over the potatoes.
Roast in the oven for 35–40 minutes, flipping once halfway through, until potatoes are golden and crispy and bacon is cooked.
Remove from oven and garnish with fresh parsley. Serve hot!
