These crispy fritters with their molten cheese centers are irresistibly delicious and perfect for sharing—or not!

Ingredients:
Buckwheat flour: 1 cup (120 g)
• All-purpose flour: ½ cup (60 g)
Beer: ¾ cup (180 ml)
• Sparkling water: ¼ cup (60 ml)
• Gruyere or Fontina cheese: 8 oz (230 g), cubed
Salt: ½ tsp (3 g)
Vegetable oil: For frying

Instructions:
1. Prepare the batter: In a bowl, mix buckwheat flour, all-purpose flour, salt, beer, and sparkling water until smooth. Let rest for 30 minutes.
2. Heat the oil: Heat vegetable oil in a deep pan to 350°F (175°C).
3. Coat the cheese: Dip each cheese cube into the batter, ensuring it’s fully coated.
4. Fry the fritters: Carefully drop the coated cheese cubes into the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.
5. Serve: Plate the fritters warm and crispy.
