Grilled Pork with Soba Noodles & Creamy Sauce 🍜
Ingredients:
For the Pork:
1 pound boneless, skinless pork chops, cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Noodles:
8 ounces soba noodles
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Vegetables:
1 cup chopped bell peppers (any color)
1/2 cup chopped onion
1/4 cup chopped scallions
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Creamy Sauce:
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon lemon juice
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions:
Marinate the Pork: In a bowl, combine pork cubes with olive oil, garlic powder, onion powder, salt, and pepper. Marinate for at least 30 minutes, or up to 2 hours.
Cook the Noodles: Cook soba noodles according to package directions. Drain and toss with olive oil, salt, and pepper.
Grill the Pork: Preheat grill to medium-high heat. Grill the pork cubes for 3-4 minutes per side, or until cooked through. Let rest for 5 minutes before serving.
Sauté the Vegetables: Heat 1 tablespoon olive oil in a skillet over medium heat. Add bell peppers, onion, and scallions. Cook for 5-7 minutes, or until softened. Season with salt and pepper.
Make the Creamy Sauce: In a small bowl, whisk together mayonnaise, sour cream, lemon juice, garlic, salt, and pepper.
Assemble the Bowls: Divide soba noodles among bowls. Top with grilled pork, sautéed vegetables, and drizzle generously with the Creamy Sauce.
Tips:
You can use any type of pork you like for this recipe.
For a spicier sauce, add a pinch of red pepper flakes to the Creamy Sauce.
Serve the bowls with your favorite side dishes, such as a green salad or roasted vegetables.
