Ingredients:
1 cup shelled edamame (frozen and thawed)
1 cup canned small white beans (navy beans), rinsed and drained
3 tablespoons tahini
1 large garlic clove (or 2 small)
2 tablespoons fresh lemon juice
1 teaspoon kosher salt
1/2 teaspoon ground cumin
1/4 cup extra-virgin olive oil (plus more for drizzling)
6 ounces pineapple rings or spears
3/4 teaspoon ground sumac, divided
For serving: warm pita, tortilla chips, or pita chips

Instructions:
Prepare the Pineapple:
Lightly brush pineapple with oil (avocado, grapeseed, or olive oil works well) and sprinkle with 1/2 teaspoon of sumac. Grill in a pan over medium heat until caramelized, about 3–4 minutes per side. Let cool slightly and cut into small pieces.

Make the Hummus:
In a food processor, combine edamame, white beans, tahini, garlic, lemon juice, salt, and cumin. Pulse until coarse. With the motor running, slowly drizzle in olive oil, blending until smooth. For a creamier texture, add 2 tablespoons of water and blend again.

Assemble and Serve:
Spread the hummus in a shallow bowl. Scatter grilled pineapple pieces on top. Drizzle with extra olive oil and sprinkle the remaining 1/4 teaspoon of sumac for garnish.

Serve immediately with your choice of pita, chips, or veggies. Enjoy!
