🥔🥩 Shepherd’s Pie Soup – Cozy, Creamy & Comfort in a Bowl!
Ingredients:
1 lb ground beef or lamb
1 onion, chopped
2 carrots, diced
2 cloves garlic, minced
2 tbsp flour
3 cups beef broth
1 cup milk or cream
1 cup frozen peas
2 cups mashed potatoes (for topping or stirring in)
1 tsp thyme
Salt & pepper to taste
1 tbsp butter
Directions:
In a large pot, brown beef with onion, carrots, and garlic. Drain excess fat.
Stir in flour and cook for 1 minute to thicken.
Pour in beef broth and bring to a simmer for 10–12 minutes, until carrots are tender.
Add milk, peas, thyme, salt, and pepper. Stir in mashed potatoes until creamy.
Simmer a few more minutes until hot and velvety.
