Keto Almond Cake
Ingredients
2 cups almond flour
½ cup unsalted butter (melted, or use coconut oil)
4 large eggs
½ cup erythritol, monk fruit, or allulose (keto sweetener of choice)
1 tsp vanilla extract
1 tsp almond extract (optional, for stronger almond flavor)
1 ½ tsp baking powder
¼ cup unsweetened almond milk (or heavy cream for richer texture)
Pinch of salt
2 tbsp sliced almonds (for topping)
Instructions
Preheat oven:
Heat oven to 350°F (175°C). Grease and line an 8x8-inch baking pan.
Mix wet ingredients:
In a bowl, whisk eggs, melted butter, sweetener, vanilla, and almond extract until smooth.
Add dry ingredients:
Mix in almond flour, baking powder, and salt. Stir until combined.
Add almond milk/heavy cream for a smooth batter.
Bake:
Pour batter into the prepared pan. Sprinkle sliced almonds on top.
Bake 25–30 minutes, until golden brown and a toothpick comes out clean.
Cool & serve:
Let cake cool before slicing. Can be served plain, with whipped cream, or with a keto glaze.
