Ingredients (for 1 muffin)
3 tbsp almond flour (fine)
1 tbsp coconut flour (optional, for texture)
½ tsp baking powder
Pinch of salt
1 egg (large)
1 tbsp melted butter (or olive oil/coconut oil)
1 tbsp unsweetened almond milk (optional, makes it softer)
Instructions
Microwave Method (Quick – 2 min):
Take a microwave-safe mug or ramekin (about 4 inches wide).
Mix all ingredients well until smooth.
Microwave for 90 seconds – 2 minutes, until set.
Remove, let cool slightly, and slice in half.
Toast in a skillet or toaster for a nice golden crust (like your left photo).
Oven Method (Better texture):
Preheat oven to 180°C (350°F).
Pour batter into greased ramekin or small baking dish.
Bake for 12–15 minutes until firm.
Slice and toast.
