Amish Cinnamon Bread
Ingredients:
For the Batter:
- 1 cup butter, softened
- 2 cups sugar
- 2 eggs
- 2 cups buttermilk or homemade buttermilk
- 4 cups flour
- 2 teaspoons baking soda
For the Cinnamon/Sugar Mixture:
- 2/3 cup sugar
- 2 teaspoons cinnamon
Directions:
1. Preheat your oven to 350°F (175°C) and grease two 9x5-inch loaf pans.
2. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
3. Beat in the eggs one at a time until fully incorporated.
4. Add the buttermilk and mix well.
5. In a separate bowl, combine the flour and baking soda.
6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
7. In a small bowl, mix the sugar and cinnamon for the cinnamon/sugar mixture.
8. Pour a third of the batter into each loaf pan.
9. Sprinkle half of the cinnamon/sugar mixture evenly over the batter in each pan.
10. Repeat by adding another third of the batter over the cinnamon layer, followed by the remaining cinnamon/sugar mixture.
11. Top with the remaining batter.
12. Using a knife or skewer, swirl the batter and cinnamon mixture gently to create a marbled effect without overmixing.
13. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
14. Allow the bread to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
