Almond Joy Cookie recipe inspired by the classic candy bar:
Almond Joy Cookies
Ingredients:
1 cup (2 sticks) unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
2 large eggs
2 tsp vanilla extract
2 ¼ cups all-purpose flour
1 tsp baking soda
½ tsp salt
2 cups sweetened shredded coconut
1 ½ cups semi-sweet chocolate chips (or chunks)
1 cup whole almonds (or slivered for easier biting)
Instructions:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then add the vanilla.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients.
Fold in the coconut, chocolate chips, and almonds.
Drop dough by rounded tablespoons onto prepared baking sheets, spacing about 2 inches apart.
Bake for 10–12 minutes, until edges are golden brown but centers are still soft.
Cool on the baking sheet for 2 minutes, then transfer to a wire rack to finish cooling.
Optional: For an extra candy-bar touch, press an almond on top of each cookie before baking, then drizzle with melted chocolate after cooling.
