Crispy Air Fryer Salmon Tacos with Crunchy Slaw
Ingredients:
2 (6-ounce) salmon fillets
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
8 small corn tortillas
1 cup shredded green cabbage
1/2 cup shredded carrots
1/4 cup chopped fresh cilantro
1/4 cup mayonnaise
1 tablespoon lime juice
1 teaspoon honey
1 avocado, sliced
Lime wedges for serving

1. Preheat the air fryer to 400°F (200°C).
2. In a small bowl, mix together the olive oil, chili powder, garlic powder, cumin, salt, and black pepper. Rub this mixture evenly over the salmon fillets.
3. Place the seasoned salmon fillets in the air fryer basket and cook for 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.
4. While the salmon is cooking, prepare the slaw. In a large bowl, combine the shredded cabbage, shredded carrots, and chopped cilantro.
5. In a separate small bowl, whisk together the mayonnaise, lime juice, and honey. Pour this dressing over the slaw and toss to combine.
6. Once the salmon is done, remove it from the air fryer and let it rest for a couple of minutes. Then, flake the salmon into bite-sized pieces.
7. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side or until pliable.
8. To assemble the tacos, place some flaked salmon on each tortilla, top with the slaw, and add a few slices of avocado. Serve with lime wedges on the side.
