🍊 Orange Polenta Cake
A moist and fragrant Italian cake, perfect for citrus lovers.
Ingredients:
Fine cornmeal (polenta): 200 g
Almond flour: 100 g
All-purpose flour: 50 g
Baking powder: 1 tsp (5 g)
Unsalted butter: 150 g, softened
Granulated sugar: 150 g
Eggs: 3
Orange zest: from 2 oranges
Fresh orange juice: 100 ml
Powdered sugar: for dusting
Instructions:
1️⃣ Preheat the oven to 180°C (350°F). Grease and line a cake tin.
2️⃣ Cream together butter and sugar until light and fluffy.
3️⃣ Beat in eggs one at a time.
4️⃣ Add orange zest and juice, mix well.
5️⃣ Combine polenta, almond flour, flour, and baking powder; fold into wet mixture.
6️⃣ Pour batter into tin and bake for 35-40 minutes, or until a toothpick comes out clean.
7️⃣ Cool and dust with powdered sugar before serving.
