Ingredients for 1 small loaf (serves approx. 2β4):
300 g all-purpose flour (type 405)
1 packet baking powder (about 15β16 g)
1 tsp salt
1 tsp sugar (enhances browning and flavor)
250 g plain yogurt (3.5β10% fat, not too firm)
2 tbsp sunflower oil or canola oil
(Optional) 1 tsp lemon juice + Β½ tsp baking soda β for extra fluffiness
For brushing: a little milk or water
Optional topping: sesame seeds, poppy seeds, flaxseeds
π©βπ³ Instructions
1οΈβ£ Preheat the oven
Preheat to 200Β°C (top/bottom heat) or 180Β°C fan.
Line a baking tray with parchment paper.
2οΈβ£ Prepare the dough
In a large mixing bowl, combine:
flour
baking powder
salt
sugar
Add:
yogurt
oil
(optional) lemon juice + baking soda for lighter texture
Mix everything with a spoon or your hands into a soft, smooth, non-sticky dough.
(If too dry, add a spoon of yogurt; if too wet, add a bit of flour.)
3οΈβ£ Shape the loaf
Shape the dough into a round or oval loaf.
Place it on the prepared baking tray.
Score the top lightly in a cross or lengthwise β this helps it rise evenly.
Brush with a little milk or water and sprinkle with seeds if desired.
4οΈβ£ Bake
Bake in the preheated oven for 18β22 minutes, until golden brown.
Tap the bottom β if it sounds hollow, itβs done!
5οΈβ£ Cool
Let cool on a rack for about 10 minutes.
Best enjoyed warm with butter or cream cheese.
π‘ Tip:
This bread is highly customizable β try adding chopped herbs, olives, cheese cubes, or sun-dried tomatoes to the dough.
Can also be shaped into mini flatbreads or rolls β reduce baking time to 12β15 minutes.
