Super cheap and easy vegan tortilla soup! Done in the instant pot for 11 min
Recipe:
Mirepoix roughly chopped (I guess I didn’t clarify originally-mirepoix is carrot onion celery)
Can chick peas
Can black beans
Can tomatoes
Can of corn
2 tbsp cumin (or to taste)
2 tbsp chili powder (or to taste)
1 container of vegetable broth (I think they’re 1l or 750ml)
1 tbsp lime juice
1 tbsp brown sugar (or erythritol)
Healthy handful cilantro
Salt to taste (I like mine salty)
Instant pot for 11 min
Top with air fried tortilla strips, cilantro, avocado.
