No-Bake Chickpea and Date Power Bars 🌱⚡
Ingredients:
- 1 cup (160g) cooked chickpeas, drained and rinsed
- 1 cup (150g) pitted dates
- ½ cup (60g) almonds (or cashews)
- ¼ cup (30g) sunflower seeds
- 2 tbsp flaxseeds (or chia seeds)
- ¼ cup (60ml) honey or maple syrup
- 1 tsp vanilla extract
- ½ tsp cinnamon powder
- ¼ tsp salt
- ½ cup (50g) rolled oats
Directions:
1. Blend chickpeas and dates in a food processor until a thick paste forms.
2. Add nuts, seeds, honey, vanilla, cinnamon, and salt. Pulse until well combined.
3. Stir in oats and mix until the dough holds together.
4. Press the mixture into a lined baking dish and refrigerate for 1 hour.
5. Cut into bars and store in an airtight container in the fridge.
