Ingredients:
2 halibut fillets, 1 tbsp olive oil, 1 tbsp butter, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, 1 tbsp lemon juice, 6 large sea scallops, 4 large potatoes, peeled & cubed, 50g (1/4 cup) butter, 100ml (1/2 cup) heavy cream, 1 cup baby carrots, 2 cups baby potatoes, halved, 1 clove garlic, minced, 1 tbsp fresh parsley, chopped

Directions:
1. Prepare the Halibut: Pat halibut fillets dry and season with salt, black pepper, garlic powder, and smoked paprika. Heat olive oil in a pan over medium-high heat. Sear halibut for 3-4 minutes per side until golden brown. In the last minute, add butter and lemon juice, basting the fish.
2. Sear the Scallops: Pat scallops dry and season with salt, black pepper, and garlic powder. Heat butter and olive oil in a pan over high heat. Sear scallops for 2 minutes per side until golden and caramelized.
3. Make the Mashed Potatoes: Boil potatoes until fork-tender, which takes about 15 minutes. Mash them with butter, heavy cream, salt, and garlic powder.
4. Roast the Carrots & Potatoes: Toss the baby carrots and baby potatoes in olive oil, garlic, salt, and black pepper. Roast them at 200°C (400°F) for 20-25 minutes until tender and slightly caramelized. Toss with butter and fresh parsley before serving.
5. Assemble & Serve: Plate the mashed potatoes, then add the seared halibut and scallops on top. Serve with roasted carrots and potatoes on the side. Drizzle with extra butter and garnish with parsley.
