🍿 S’mores Popcorn Balls 🍫
Ingredients
8 cups freshly popped popcorn
1 cup mini marshmallows
½ cup graham cracker crumbs (about 4-5 sheets, crushed)
½ cup semi-sweet chocolate chips
¼ cup unsalted butter
3 tbsp honey (or light corn syrup)
1 tsp pure vanilla extract
Optional: extra marshmallows and chocolate for drizzling
Instructions
Prepare the Popcorn:
Pop the popcorn and place it in a large mixing bowl. Remove any unpopped kernels to avoid crunching into them later.
Melt the Binding Mixture:
In a medium saucepan, combine the butter, honey, and vanilla extract over low heat. Stir until the butter is fully melted and the mixture is smooth.
Add Marshmallows:
Increase the heat to medium and add the mini marshmallows to the saucepan. Stir constantly until the marshmallows are completely melted and the mixture is thick and glossy.
Combine with Popcorn:
Pour the melted marshmallow mixture over the popcorn. Add the graham cracker crumbs and chocolate chips. Gently toss everything together using a spatula or your hands (lightly greased with butter or cooking spray) until the popcorn is evenly coated.
Form the Popcorn Balls:
Let the mixture cool slightly until it’s safe to handle. Scoop out portions and press them firmly into balls, about the size of a tennis ball. If the mixture sticks to your hands, grease them lightly with butter or cooking spray.
Optional Drizzle:
For an extra touch of s’mores flair, melt additional marshmallows and chocolate chips separately. Drizzle them over the popcorn balls for a decorative finish.
Set and Serve:
Place the popcorn balls on a parchment-lined tray and let them set for about 15-20 minutes. Serve and enjoy these gooey, crunchy delights!
