🧄 Pasta alla Gricia
A simple Roman pasta dish loaded with flavor – crispy guanciale and Pecorino Romano in every bite!
📝 Ingredients:
• 12 oz rigatoni or tonnarelli
• 12 oz guanciale, diced
• 1/2 cup Pecorino Romano, grated
• Freshly ground black pepper
👩🍳 Instructions:
1️⃣ Boil pasta in salted water until al dente. Reserve 1 cup of pasta water.
2️⃣ In a pan, cook guanciale until crispy. Remove from heat.
3️⃣ Drain pasta and add to the pan with guanciale.
4️⃣ Toss in Pecorino and black pepper. Add pasta water gradually to create a creamy sauce.
5️⃣ Serve immediately with extra cheese and pepper on top!
