Southern Fried Salmon Patties
Ingredients:
1 (14 ¾ oz) can salmon
¼ cup onion, finely chopped
¼ cup cornmeal
¼ cup flour
1 egg
3 tablespoons mayonnaise
Oil for frying
Directions:
Drain the canned salmon and transfer it to a mixing bowl. Remove large bones if desired, but leave the smaller, edible ones intact.
Add the chopped onion, cornmeal, flour, egg, and mayonnaise to the salmon.
Stir until fully combined and the mixture holds together.
Form into patties about the size of your palm and set aside.
Heat oil in a skillet over medium heat.
Gently place the salmon patties into the hot oil.
Fry for 3-4 minutes per side until golden brown and crispy.
Transfer to a paper towel-lined plate to drain excess oil.
Serve warm with your favorite dipping sauce or a side of greens.
Servings: Makes approximately 6 patties
